I am not a salad lover. I am usually left feeling unsatiated and hate when I am hungry 2 hours after eating a meal. Don’t get me wrong, I love eating fresh produce, but I need a good dose of fat in a meal, salad or otherwise. That is why I love this dressing – it is really flavorful and provides just enough richness to balance everything out.
Sequatchie Cove Creamery sells a variety of fresh raw cow’s milk cheeses at the Main Street Farmers Market each Wednesday. Last week, I picked up a new blue cheese called Bellamy Blue (so new, in fact, that it isn’t yet on their website). You can use any blue cheese you wish but give this one a try if you can – it is pungent, creamy and delicious.
I really, really love this dressing with sun-dried (or oven-roasted) tomatoes, fennel and radishes. I have eaten this combination on salad greens and also with French lentils. I think you could turn this into a great sandwich with the addition of chicken or beef. I would love to hear how you use it!
