Don’t throw away those beet stems! While this only makes a small amount, it is so easy that you don’t have an excuse not to make it. You can add other stems too – save your Swiss chard, collard green and kale stems and add them to the mix.
This makes a fairly sweet jam with just a hit of earthiness from the beets. You can scale the sugar back if you want the flavor of the beet to come through more. I ate this served on crackers but I think a blue or goat cheese would be an awesome addition. Enjoy!
